Need a good recipe for Black Eyed Peas? Here it is……

I am not a huge black-eye pea fan, but Wendy Jackson made this a while back and I fell in love with it. Now instead of a little nibble of peas with a little luck, I can have lots for a LOT of LUCK. Enjoy.

3 (15oz) cans peas, drained
3 cloves minced garlic
10 green onions, shivered
1 purple onion, thinly sliced
1 cup chopped/sliced celery
1 thinly sliced green pepper
 Dressing:
3 T lemon juice
1/3 c tarragon vinegar
½ t salt
¼ t tabasco
2/3 c oil
Chopped parsley for garnish
 
Combine drained peas, veggies and toss.  Combine dressing ingredients, pour over salad and combine.  Let meld for several hours. Season with salt and pepper to taste.  Sprinkle with chopped parsley.
