This was brought to one of our sales by Wendy Jackson. Who would have thought black eyed peas could taste so good.

Black eyed Pea Salad

3 (15oz) cans peas, drained

3 cloves minced garlic

10 green onions, shivered

1 purple onion, thinly sliced

1 cup chopped/sliced celery

1 thinly sliced green pepper

 

Dressing:

3 T lemon juice

1/3 c tarragon vinegar

½ t salt

¼ t tabasco

2/3 c oil

Chopped parsley for garnish

 

Combine drained peas, veggies and toss.  Combine dressing ingredients, pour over salad and combine.  Let meld for several hours. Season with salt and pepper to taste.  Sprinkle with chopped parsley.

Who would have thought it would taste so good?
